About Manuel's Restaurant
The Inspiration
While pursuing a graduate degree at the Institute of Latin American Studies at the University of Texas, Greg Koury developed the idea for MANUEL’S. Working with his grandparents in their steakhouses while growing up, and later managing several Austin establishments, led him to the dream of opening his own restaurant. His vision was not Tex-Mex but something more specific: authentic, artfully prepared dishes from Mexico’s interior and coastal regions.
That dream became a reality in 1984 with the opening of MANUEL’S in downtown Austin (310 Congress Avenue). In 1998, MANUEL’S Great Hills opened on Jollyville Road in the Arboretum to serve guests on the north side of town.

MANUEL’S has a rich history of community relationships, providing support for food-related programs, charitable organizations, and the performing arts.
